Beans Beads with Oil
1 package Beans Beads Ainos (1000 gr)
500 ml of boiling water
300 gr. tomato, grated
70 gr. olive oil
2 tsp. sugar
1 ½ carrot, cut into half rings
1 onion, finely chopped
1 tbsp. fresh mint, chopped (or 1 tsp dried)
3 tbl. parsley, finely chopped
Put the oil in a medium heat pot. Once it's hot, we pour the onion and the carrot in the pot. Add the sugar, stir and sauté for about 5 minutes
Add the beads to the saucepan and sauté along with the onion and the carrot for 2-3 minutes of well stirring. Add the tomato and hot water and let our food simmer for about 45 minutes. If we want to cover the saucepan, put the ⅔ of the water and check on the way if it needs a supplement. In the last 10 minutes of boiling, add the parsley and the mint and wait until we have a thick sauce. If the beads remain tough for our taste preferences, add some water and boil for another 10 minutes.Bon apetite!
